Mustard seeds crushed slowly in a wooden ghani at low temperature — under 40°C. No heat, no chemicals, no refining. The pungency, the deep gold colour, the omega-3s, the smell that hits you when you open the bottle — all of it stays in.
Refined oil is heat-treated and bleached, which strips out the sharp aroma and most of the omega-3s. For pickles, parathas, achaar, sarson da saag and tadka, kacchi ghani is what your dadi used. For deep-frying neutral foods, refined is fine.

12 months from the manufacturing date stamped on the bottle. Store in a cool dark place, sealed. Cold-pressed oil thickens slightly in winter — that is normal, not spoilage.
